Pickled Red Onions

Description

These quick pickled red onions are a flavorful addition to many dishes.


Ingredients

Scale
  • 1 large red onion
  • ½ cup hot water
  • ½ cup apple cider vinegar (or rice vinegar)
  • 2 tablespoons sugar or honey
  • 2 teaspoons salt

Instructions

  1. Peel and slice the onion into 1/8th inch rounds.
  2. Find a glass jar or airtight container that is large enough to hold the sliced onions and liquid.
  3. Pour the hot water into the container and stir in the sugar or honey, and salt. Stir until it dissolves. Then stir in the vinegar.
  4. Add the onions slices and press them down to make sure they are submerged.
  5. Let the onions soak and “pickle” in the liquid for at least 30 minutes.
  6. Serve, or cover and refrigerate until ready to use.

Notes

  • For best flavor, let the onions sit in the pickling liquid for a few hours before serving.
  • These pickled onions can be stored in the refrigerator for up to 2 weeks.
