Description

Delicious lemon curd-filled cookies that are light and fluffy, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp lemon zest
  • 1/4 cup lemon juice
  • 1/2 cup lemon curd, for filling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture, mixing just until combined.
  5. Stir in the lemon zest and juice.
  6. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  7. Using your thumb, make an indentation in the center of each cookie.
  8. Fill each indentation with lemon curd.
  9. Bake for 12-15 minutes or until lightly golden.
  10. Let cool on the baking sheet for a few minutes before transferring to wire racks.
