Description

Ingredients

  • 1/4 cup raw honey
  • 2 tbsp hot sauce
  • 4 cups mixed fresh greens (romaine and spinach)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • 1/2 red onion, thinly sliced
  • 2 tbsp olive oil
  • to taste salt and pepper
  • 2 tbsp low-sodium soy sauce
  • Juice of 1 lime
  • 1 tsp smoked paprika

Instructions

  1. In a bowl, whisk together honey, hot sauce, soy sauce, lime juice, garlic powder, and smoked paprika to create the marinade.
  2. Marinate the chicken in the mixture for at least 30 minutes.
  3. Preheat the grill or stovetop pan over medium-high heat.
  4. Cook the chicken for about 7-8 minutes per side or until internal temperature reaches 165°F (75°C).
  5. While the chicken cooks, chop the greens, cucumber, tomatoes, and red onion.
  6. After resting for a few minutes, slice the grilled chicken into strips.
  7. Assemble the salad by layering greens, veggies, and chicken on a serving platter.
  8. Drizzle with olive oil and season with salt and pepper before serving.
