Description
A refreshing grilled chicken salad with a honey hot sauce dressing, perfect for a light meal.

- 3–4 boneless, skinless chicken breasts (about 1 lbs)
- 1/4 cup raw honey
- 2 tbsp hot sauce
- 4 cups mixed fresh greens (romaine and spinach)
- 1 cup cherry tomatoes, halved
- 1 cucumber, thinly sliced
- 1/2 red onion, thinly sliced
- 2 tbsp olive oil
- to taste salt and pepper
- 2 tbsp low-sodium soy sauce
- Juice of 1 lime
- 1 tsp smoked paprika
Instructions
- In a bowl, whisk together honey, hot sauce, soy sauce, lime juice, garlic powder, and smoked paprika to create the marinade.
- Marinate the chicken in the mixture for at least 30 minutes.
- Preheat the grill or stovetop pan over medium-high heat.
- Cook the chicken for about 7-8 minutes per side or until internal temperature reaches 165°F (75°C).
- While the chicken cooks, chop the greens, cucumber, tomatoes, and red onion.
- After resting for a few minutes, slice the grilled chicken into strips.
- Assemble the salad by layering greens, veggies, and chicken on a serving platter.
- Drizzle with olive oil and season with salt and pepper before serving.
