- 1 lb (450g) lean ground beef
- 1 packet (30g) low-sodium taco seasoning
- 1 head romaine lettuce, chopped
- 1 cup (150g) cherry tomatoes, halved
- 1 ripe avocado, sliced
- 1/2 cup (50g) shredded cheddar cheese
- 1/4 cup (60g) sour cream or Greek yogurt
- 1/4 cup (60g) salsa
- Fresh cilantro for garnish
Instructions
- Brown the lean ground beef in a skillet over medium heat until fully cooked, breaking it up with a spatula as it cooks.
- Drain any excess grease from the skillet.
- Add the taco seasoning and a splash of water according to packet instructions. Simmer for 2–3 minutes, stirring well to combine.
- In a large salad bowl, create a bed of chopped romaine lettuce.
- Top the lettuce with the warm seasoned beef, halved cherry tomatoes, sliced avocado, and shredded cheddar cheese.
- Add dollops of sour cream (or Greek yogurt) and salsa over the salad.
- Garnish generously with fresh cilantro.
- Serve immediately while the beef is warm and the lettuce stays crisp for the best flavor and texture.

- This salad can be customized with other toppings like black olives or jalapeños.
- For a vegetarian option, substitute ground beef with lentils or beans.
