Description

Delicious stuffed bell peppers filled with lean turkey, rice, and cheese.


Ingredients

  • 4 large bell peppers (any color)
  • 1 lb lean ground turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup cooked rice or quinoa
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella or cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C). Lightly spray a baking dish with nonstick spray.
  2. Wash the bell peppers, slice off the tops, and remove seeds. Set aside.
  3. In a skillet over medium heat, sauté diced onion in 1 tbsp olive oil until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  4. Add ground turkey to the skillet and season with salt and pepper; cook until browned (about 6-8 minutes).
  5. Stir in cooked rice or quinoa and half of the tomato sauce until well combined.
  6. Stuff each pepper with the turkey mixture and place upright in the baking dish. Top with remaining tomato sauce and sprinkle cheese on each pepper.
  7. Bake for about 35 minutes, or until peppers are tender and cheese is bubbly.

Notes

  • The olive oil in step 3 is necessary for sautéing the onion.
  • For added flavor, consider adding spices such as Italian seasoning or chili powder to the turkey mixture.
