Description

Delicious no-bake cookies made with creamy peanut butter and oats.

Ingredients

Scale
  • 1/2 cup unsalted butter
  • 2 cups granulated sugar
  • 1/2 cup whole milk
  • 1 cup creamy peanut butter
  • 1 teaspoon pure vanilla extract
  • 3 cups quick-cooking oats
  • 1 pinch salt (optional)

Instructions

  1. Line a baking sheet with parchment or wax paper. Measure out all your ingredients so you’re ready to move quickly.
  2. In a medium saucepan over medium heat, combine the butter, sugar, and milk. Stir constantly until smooth and let boil for exactly 1 minute.
  3. Remove from heat and stir in the peanut butter and vanilla extract until fully melted and smooth.
  4. Stir in the oats until completely coated and evenly mixed.
  5. Use a cookie scoop or spoon to drop mounds of the mixture onto the prepared sheet.
  6. Let the cookies set at room temperature for 20–30 minutes, or refrigerate for faster results.
  7. (Optional) Customize with mini chocolate chips, shredded coconut, or a sprinkle of sea salt before they set.

Notes

  • For a chocolatey twist, add mini chocolate chips.
  • These cookies can be stored in an airtight container for up to a week.
