Delicious no-bake cookies made with creamy peanut butter and oats.

- 1/2 cup unsalted butter
- 2 cups granulated sugar
- 1/2 cup whole milk
- 1 cup creamy peanut butter
- 1 teaspoon pure vanilla extract
- 3 cups quick-cooking oats
- 1 pinch salt (optional)
Instructions
- Line a baking sheet with parchment or wax paper. Measure out all your ingredients so you’re ready to move quickly.
- In a medium saucepan over medium heat, combine the butter, sugar, and milk. Stir constantly until smooth and let boil for exactly 1 minute.
- Remove from heat and stir in the peanut butter and vanilla extract until fully melted and smooth.
- Stir in the oats until completely coated and evenly mixed.
- Use a cookie scoop or spoon to drop mounds of the mixture onto the prepared sheet.
- Let the cookies set at room temperature for 20–30 minutes, or refrigerate for faster results.
- (Optional) Customize with mini chocolate chips, shredded coconut, or a sprinkle of sea salt before they set.
Notes
- For a chocolatey twist, add mini chocolate chips.
- These cookies can be stored in an airtight container for up to a week.
