Description
A refreshing summer salad made with fava beans, burrata cheese, cherry tomatoes, and fresh herbs.
Ingredients

- 2 cups fava beans (shelled)
- 1 cup burrata cheese (torn into pieces)
- 1 cup cherry tomatoes (halved)
- 1/4 cup fresh basil (chopped)
- 1/4 cup fresh mint (chopped)
- 1 tablespoon olive oil (extra virgin)
- 1 tablespoon lemon juice (freshly squeezed)
- to taste salt
- to taste black pepper
Instructions
- Bring a pot of salted water to a boil. Add the fava beans and cook for about 3-5 minutes until tender. Drain and rinse under cold water.
- In a mixing bowl, combine the cooked fava beans, cherry tomatoes, basil, and mint. Drizzle with olive oil and lemon juice, then season with salt and pepper.
- Gently toss the salad to combine all ingredients. Top with torn burrata cheese.
Notes
- For extra flavor, consider adding a pinch of red pepper flakes.
- This salad is best served fresh, but can be stored in the refrigerator for a day.
