Description

A refreshing summer salad made with fava beans, burrata cheese, cherry tomatoes, and fresh herbs.


Ingredients

Scale
  • 2 cups fava beans (shelled)
  • 1 cup burrata cheese (torn into pieces)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup fresh basil (chopped)
  • 1/4 cup fresh mint (chopped)
  • 1 tablespoon olive oil (extra virgin)
  • 1 tablespoon lemon juice (freshly squeezed)
  • to taste salt
  • to taste black pepper

Instructions

  1. Bring a pot of salted water to a boil. Add the fava beans and cook for about 3-5 minutes until tender. Drain and rinse under cold water.
  2. In a mixing bowl, combine the cooked fava beans, cherry tomatoes, basil, and mint. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  3. Gently toss the salad to combine all ingredients. Top with torn burrata cheese.

Notes

  • For extra flavor, consider adding a pinch of red pepper flakes.
  • This salad is best served fresh, but can be stored in the refrigerator for a day.
