A rich and creamy Velveeta beef dip, perfect for parties or game day!
Ingredients

- 1 lb ground beef
- 1 can (10 oz) Rotel tomatoes with green chilies, undrained
- 16 oz Velveeta cheese, cubed
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp smoked paprika (optional)
- Salt, to taste
- Black pepper, to taste
- Optional toppings: chopped tomatoes, jalapeños, cilantro, green onions
- Tortilla chips or bread, for serving
Instructions
- In a skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess grease.
- Transfer the cooked beef to the Crock Pot.
- Add cubed Velveeta, Rotel tomatoes (with juices), garlic powder, onion powder, smoked paprika, salt, and pepper.
- Set Crock Pot to low and cook for 1 to 2 hours, stirring every 30 minutes.
- Once melted and well mixed, taste and adjust seasonings as needed.
- Serve warm, garnished with optional toppings, and keep on the warm setting during serving.
- Pair with tortilla chips, veggie sticks, or crusty bread.
- Store leftovers in an airtight container in the fridge for up to 4 days.
Notes
- This dip can be made ahead of time and reheated.
- Adjust spices according to your heat preference.
- For a thicker dip, reduce the amount of Rotel tomatoes.
