- 1 cup orzo
- 5 oz Boursin cheese (Garlic & Fine Herbs)
- 2 cups vegetable broth
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 shallot, finely chopped
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley or chives, chopped (optional)
Instructions
- In a large oven-safe skillet, heat olive oil over medium heat. Sauté garlic and shallot for 2–3 minutes until softened.
- Pour in vegetable broth and heavy cream. Stir in orzo and bring to a simmer for 3 minutes.
- Add chunks of Boursin cheese to the skillet and stir gently to begin melting.
- Transfer skillet to a 375°F (190°C) oven and bake uncovered for 18–20 minutes until bubbling and golden.
- Let rest for a few minutes, garnish with herbs, and serve warm.
Notes
- This dish can be garnished with additional herbs for more flavor.
- For a lighter version, you can use half-and-half instead of heavy cream.
