Description

This hearty lentil vegetable soup is packed with flavor and nutrition, perfect for a comforting meal.


Ingredients

  • 1 cup green or brown lentils (rinsed)
  • 2 medium carrots (diced)
  • 2 stalks celery (diced)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 6 cups low-sodium vegetable broth
  • 2 bay leaves
  • 1 tsp ground cumin
  • Salt & pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until softened (about 5 minutes).
  2. Stir in minced garlic and cook for an additional minute.
  3. Add rinsed lentils, bay leaves, cumin, salt, and pepper; mix well.
  4. Pour in vegetable broth to cover the ingredients by about an inch. Bring to a boil then reduce heat to low.
  5. Simmer uncovered for about 25 minutes or until lentils are tender but retain their shape.
  6. Remove bay leaves before serving. Adjust seasoning as desired and serve hot with crusty bread or salad.

Notes

  • This soup can be made ahead and stored in the refrigerator for up to 5 days.
  • Feel free to add more vegetables based on your preference.
