Description
A delicious pasta dish featuring caramelized onions and a hint of spice.
Ingredients

- 2 large yellow onions
- 4 tablespoons olive oil
- 1 teaspoon chilli flakes
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 250 grams spaghetti or linguine
- Salt, to taste
- Black pepper, to taste
Instructions
- Thinly slice the onions. In a heavy-bottomed skillet, heat 2 tablespoons olive oil over medium-low heat. Add the onions and a pinch of salt. Cook slowly for 30–40 minutes until deeply golden and caramelized.
- In a small saucepan, heat the remaining 2 tablespoons of olive oil over low heat. Add minced garlic and chilli flakes. Let infuse for 2–3 minutes, then remove from heat.
- Boil a large pot of salted water. Cook spaghetti until just al dente. Reserve 1 cup of pasta water, then drain.
- Toss the cooked pasta into the onion pan. Add splashes of pasta water to create a sauce. Drizzle in the chilli oil and stir to coat.
- Finish with black pepper and chopped parsley. Serve warm with extra chilli oil on the side.

- This dish pairs well with grated cheese for added flavor.
