- 2 1/2 pounds Yukon Gold potatoes, thinly sliced
- 4 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 3 cloves garlic, minced
- 2 cups whole milk
- 1 cup heavy cream
- 2 cups sharp cheddar cheese, shredded
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 1 teaspoon fresh thyme leaves (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Slice potatoes into 1/8-inch rounds and pat dry.
- Melt butter in saucepan over medium heat. Add garlic and cook 30 seconds.
- Whisk in flour and cook 1 minute.
- Gradually whisk in milk and heavy cream until smooth and thickened.
- Stir in salt, pepper, and 1 cup cheddar cheese until melted.
- Layer potatoes in baking dish, spooning sauce between layers.
- Top with remaining cheese.
- Cover with foil and bake 45 minutes.
- Remove foil and bake 20 to 25 minutes until golden and tender.
- Rest 10 minutes before serving.

- For added flavor, consider using a mix of cheeses or adding bacon.
