Description

Delicious and easy chicken fajitas made with tender chicken breasts, sautéed bell peppers, and melted cheese wrapped in tortillas.

  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 4 large flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded Cheddar cheese
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 cup bell peppers (any color), diced
  • 2 tbsp olive oil
  • Sour cream and salsa for serving

Instructions

  1. Prepare your ingredients by chopping the bell peppers and seasoning the chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium heat. Add seasoned chicken breasts and cook until golden brown on both sides (about 6-7 minutes per side). Ensure the internal temperature reaches 165°F.
  3. Remove chicken from the pan, add minced garlic and diced bell peppers to the same skillet, sautéing until fragrant (3-4 minutes).
  4. Shred the cooked chicken and mix it with the sautéed garlic and peppers.
  5. Lay tortillas flat. Spoon equal portions of the chicken mixture onto each tortilla, topping with shredded cheeses.
  6. Roll up each tortilla tightly and place seam-side down in the skillet. Cook until golden brown on both sides (3-4 minutes).
