- 3 boneless, skinless chicken breasts (about 1 lb)
- 2 cloves fresh garlic, minced
- 4 large flour tortillas
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded Cheddar cheese
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 cup bell peppers (any color), diced
- 2 tbsp olive oil
- Sour cream and salsa for serving
Instructions
- Prepare your ingredients by chopping the bell peppers and seasoning the chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat. Add seasoned chicken breasts and cook until golden brown on both sides (about 6-7 minutes per side). Ensure the internal temperature reaches 165°F.
- Remove chicken from the pan, add minced garlic and diced bell peppers to the same skillet, sautéing until fragrant (3-4 minutes).
- Shred the cooked chicken and mix it with the sautéed garlic and peppers.
- Lay tortillas flat. Spoon equal portions of the chicken mixture onto each tortilla, topping with shredded cheeses.
- Roll up each tortilla tightly and place seam-side down in the skillet. Cook until golden brown on both sides (3-4 minutes).
Notes
- Adding fresh lime juice to the fajitas can enhance the flavor.
