Ingredients

  • 9 oz cheese tortellini (fresh or frozen)
  • 1 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 2 tbsp unsalted butter
  • 2 green onions (chopped)
  • 1 cup bell peppers (diced)
  • 1 cup cooked chicken (optional)

Instructions

  1. Cook the tortellini in a large pot of salted boiling water according to package instructions until they float, about 3-5 minutes.
  2. In a skillet over medium heat, melt butter. Sauté minced garlic and diced bell peppers for about 2-3 minutes until fragrant.
  3. Pour in heavy cream and add Cajun seasoning. Stir and let simmer for about 5 minutes until slightly thickened.
  4. Gradually whisk in Parmesan cheese until melted and smooth.
  5. Drain the tortellini and add them to the skillet, tossing to coat in the creamy sauce.
  6. Stir in chopped green onions before serving hot.

Notes

  • This dish can be made with chicken or kept vegetarian by omitting the chicken.
