Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together the flour and powdered sugar until well combined.
- In another bowl, beat the unsalted butter until creamy. Add egg yolks and vanilla extract; mix until light and fluffy.
- Gradually incorporate the dry ingredients into the butter mixture until a soft dough forms.
- Divide the dough into two portions, wrap in plastic wrap, and refrigerate for one hour.
- Roll out one portion of dough on a floured surface to about 1/4 inch thick. Use heart-shaped cookie cutters to cut shapes, ensuring half have cutouts.
- Place cookies on prepared baking sheets and bake for 10-12 minutes until lightly golden. Cool completely before spreading jam on solid cookies and topping with cutout cookies.
