Description

Ingredients

  • 1 ½ cups whole wheat flour
  • ½ cup honey or maple syrup
  • 2 large eggs
  • 1 cup milk (or non-dairy alternative)
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or grease it.
  2. In a large bowl, mash the ripe bananas until smooth. Add eggs and honey (or maple syrup) and whisk until combined.
  3. In another bowl, sift together whole wheat flour, baking powder, cinnamon, and salt.
  4. Gently fold the dry ingredients into the wet mixture using a spatula until just combined; avoid overmixing.
  5. Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
  6. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean. Allow to cool slightly before serving.
