- 3 ripe bananas (mashed)
- 1 ½ cups whole wheat flour
- ½ cup honey or maple syrup
- 2 large eggs
- 1 cup milk (or non-dairy alternative)
- 1 tsp baking powder
- 1 tsp ground cinnamon
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or grease it.
- In a large bowl, mash the ripe bananas until smooth. Add eggs and honey (or maple syrup) and whisk until combined.
- In another bowl, sift together whole wheat flour, baking powder, cinnamon, and salt.
- Gently fold the dry ingredients into the wet mixture using a spatula until just combined; avoid overmixing.
- Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 20-25 minutes or until golden brown and a toothpick comes out clean. Allow to cool slightly before serving.

- For a dairy-free option, use a non-dairy milk alternative.
- These muffins can be frozen for later enjoyment.
