Ingredients

Instructions

  1. Mix the dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, sugar, and salt. This helps evenly distribute the leavening agents so your pancakes rise beautifully.
  2. Combine the wet ingredients: In a separate bowl, whisk together the Greek yogurt, eggs, and vanilla extract until smooth. The mixture will be thick and creamy. Add the milk a little at a time just until the batter loosens slightly—think of a thick cake batter consistency.
  3. Fold wet into dry: Gently fold the wet ingredients into the dry ingredients using a spatula. Stir just until combined. Be careful not to overmix—some small lumps are totally fine. Overmixing can lead to dense pancakes.
