- 1 large yellow onion, thinly sliced
- 1 pound ground beef
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon tomato paste
- ½ cup beef broth
- ½ teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4–6 hamburger buns
- 1½ cups shredded Gruyère cheese (or mozzarella for a milder flavor)
- 2 tablespoons unsalted butter (optional, for toasting buns)
Instructions
- Caramelize the Onions: In a large skillet over medium heat, heat the olive oil. Add the sliced onions and a pinch of salt. Stir occasionally and let them cook for 15–20 minutes until they’re golden brown and jammy. This step builds all that deep, sweet flavor reminiscent of French onion soup.
- Brown the Beef: Push the onions to one side of the skillet. Add the ground beef and cook until no longer pink, breaking it up with a spoon. Stir the onions back in with the beef and let them combine.
- Add the Flavor Boosters: Stir in the Worcestershire sauce, Dijon mustard, tomato paste, garlic powder, salt, and pepper. Let everything cook together for a minute or two to allow the flavors to deepen.
- Simmer with Broth: Pour in the beef broth and let the mixture simmer for about 5 minutes, stirring occasionally, until slightly thickened and saucy.
- Toast and Assemble: Optional but worth it: lightly butter the buns and toast them in a pan until golden. Spoon the beef mixture onto the bottom half of each bun and sprinkle generously with shredded Gruyère cheese. If you like it extra melty, place the assembled sandwiches under the broiler for 1–2 minutes until the cheese bubbles.
- Serve Warm: Place the top bun over the gooey beef and cheese, serve warm, and get ready for lots of napkins.
