Instructions

  1. Rinse jasmine rice under cold water until clear to remove excess starch.
  2. In a medium saucepan, combine rinsed rice, coconut milk, and water. Bring to a gentle boil.
  3. Stir in brown sugar and salt, reduce heat to simmer, cover, and cook for 15 minutes until liquid is absorbed.
  4. Fold in diced pineapple, cover again, and let sit for 5 minutes.
  5. Fluff the rice with a fork before serving and garnish with fresh cilantro if desired.
