- 1 cup full-fat coconut milk
- 1 cup water
- 2 tablespoons brown sugar
- ½ teaspoon salt
- 1 cup fresh pineapple, diced
- Fresh cilantro for garnish (optional)
Instructions
- Rinse jasmine rice under cold water until clear to remove excess starch.
- In a medium saucepan, combine rinsed rice, coconut milk, and water. Bring to a gentle boil.
- Stir in brown sugar and salt, reduce heat to simmer, cover, and cook for 15 minutes until liquid is absorbed.
- Fold in diced pineapple, cover again, and let sit for 5 minutes.
- Fluff the rice with a fork before serving and garnish with fresh cilantro if desired.
Notes
- For a richer flavor, you can toast the jasmine rice in a bit of oil before adding the liquids.
- This dish can be served warm or at room temperature.
